The Cream in my Coffee ~ Dana

Jen and I have a confession to make. We love Coffeemate Non-Dairy French Vanilla creamer. I know. We know. We, the lovers of non-chemical cleaners, we, the wearers of all-natural deodorants, we, the bakers of our own bread, we love non-dairy creamer.

Here’s why it’s problematic: non-dairy creamer is bad. It’s a fake food. It’s made up of partially hydrogenated vegetable oils (which have been linked to depression of the thyroid gland as well as decreased energy levels), mono- and digycerides (which are found in foods that contain trans fats), and dipotassium phosphate (a water-soluble salt which prevents coagulation and is “generally regarded as safe” by the FDA).

Here’s another thought: if something uses chemicals to have a shelf life of two years, it probably shouldn’t go into your body. Ew.

Lately I’ve seen lots of make your own coffee creamer on Pinterest, so I decided to try one for myself. And Jen was over with her youngest this morning, so she got to try it, too. Our verdict: it’s good. I’m not going to lie; it wasn’t as great as the fake stuff. Dang it. But I think that I can definitely make the switch. There was no yucky stuff in my coffee!

Here’s the recipe that I used from http://www.aroundmyfamilytable.com

4 8oz jars
Sweetened Condensed Milk
Half and Half
See ingredients below for flavor combinations

Add equal parts sweetened condensed milk and half and half to each jar, leaving about an inch of room at the top of each jar for flavorings and shaking space.

Flavors:
• Maple Almond – 1 tbsp maple syrup and 1 tsp pure almond extract
• Cinnamon Vanilla – 1 tsp cinnamon extract and 1 tsp vanilla bean paste (or vanilla extract)
• Mocha – 2 tbsp cocoa powder and 1 tsp espresso powder
• Coffee – 1/2 tbsp espresso powder

Once the flavors are added, screw on the lids and shake them well before refrigerating. Label jar lid with a sharpie.

Chill for at least one hour, brew some coffee, and enjoy.

Note: If you’re working with powders like cocoa and espresso, shaking won’t be enough to get everything fully incorporated, so you’ll want to use a blender or food processor, mix, and then pour the creamer into your jar. If you prefer a rich creamer, you can substitute heavy cream for half and half.

Beef Goulash ~ Dana

It’s still winter. And even though here in So Cal we’re sweating, we know that lots of our folk are freezing their tails off this weekend.  This goulash is just what the doctor (or weatherman) ordered.  So whether you’re in need of warmth down to your toes, or would just like a bowlful of comfort, it’s sure to hit the spot!

Beef Goulash (from Tyler Florence)

4 slices bacon, chopped

3 pounds boneless beef shank, trimmed and cut into 2-inch cubes

Kosher salt and freshly ground black pepper

3 Tbsp flour

2 Tbsp olive oil

2 medium onions, chopped

3 garlic cloves, minced

2 roasted red peppers, peeled and sliced

3 Tbsp Hungarian sweet paprika

2 tsp caraway seeds, toasted and ground

2 Tbsp red wine vinegar

1 (15-ounce) can whole peeled tomatoes, hand crushed

6 cups low-sodium beef broth

4 russet potatoes, peeled and thickly sliced

½ cup sour cream

Place a large heavy pot over medium heat and add the bacon.  Fry for about 5 minutes until crisp and remove to a paper towel and reserve.  Add the beef to the hot bacon fat and brown it evenly on all sides, turning with tongs; season generously with salt and pepper.  While the beef is searing, sprinkle the flour evenly in the pot and continue to stir to dissolve any clumps.  Add a little oil if necessary to keep the meat from sticking to the bottom of the pot.

Toss in the onions, garlic, roasted peppers, paprika, and caraway, cook and stir for 2 minutes until fragrant.  Stir in the vinegar, tomatoes, and broth.  Bring to a boil, then lower to a simmer and cook for one hour, covered, stirring occasionally.

Add the potatoes.  Crumble the reserved bacon into the stew and continue to simmer for 30 minutes, partially covered, until the potatoes are tender.  Season with salt and pepper.  Remove from heat and stir the sour cream into the goulash just before serving.

Cookie Monster ~ Jen

I was a Campfire girl. We didn’t sell cookies. We sold almond roca and mints. And it wasn’t a very big deal. We walked the neighborhood, called grandma and sold at the local grocery store.

To be fair, I don’t think Girl Scout cookies were a great big thing in the 80s either.

Teresa is a Gold Award Scout. That’s the Girl Scout equivalent of an Eagle Scout. Over the last 15 years, I have bought my fair share of cookies from her. Cookies were always a big thing for her, but I just assumed she was good at selling them, and probably the exception, not the rule.

The last month—our first foray into Girl Scout cookie selling—has disabused me of that notion.

Every single movie parody, stand up routine and Saturday Night Live send up of the Girl Scouts is deserved. Maybe not where the girls are concerned, but I promise you that the adult Girl Scout world is a virtual Jonestown and you better drink the koolaide.

Doesn’t that sound like a creepy recruiting pitch for selling timeshares in the Caribbean?

When you couple this with the understanding that only $.70 of each $4 box goes back to the troop or scout and that our leaders were required to commit to a certain number of cases before ordering started, that little blurb is pretty impressive spin for what is a massive fundraising campaign for the organization. GSA gets $2.08 per box.

I’ve tried for three weeks, but cannot begin to imagine a situation where a border treaty seemed like the only, best, last solution.

I’m running a huge risk by writing this. It says very clearly in the Adult Code of Conduct—which both Shea and I had to sign—that willful creation of discord is a violation. Uh-oh.

Because I haven’t even said what I really want to say.

How on earth can an organization which claims to want the best for their scouts, including physical health, sell these things, which are pure crap??? Tons of calories, sugar, palm oil and unpronounceable ingredients.

The Thin Mints and Peanut Butter Patties are vegan. How can that be when they are covered in chocolate, I wondered. Turns out, chocolate comes from a bean. That’s vegan. The higher the percentage of chocolate, the more pure it is.

And yet my ingredients list clearly states that the Thin Mints and Patties contain less than 2% of cocoa. Animal by-products are not vegan, but chemicals are? Talk about the letter and not the spirit of the law.*

And how about the math of it all?

If a young lady sells 1250 boxes of cookies, she qualifies for a Google Chromebook. She’s earned her troop $875. She’s earned GSA $2575. She’s earned herself $400 in Cookie Dough that she can apply towards Girl Scout trips and costs. The troop and GSA take-away from this child’s efforts is $3050.

A Google Chromebook retails for $199.

Maybe these details are the man behind the curtain when we’re talking about building self-esteem “better than any self-help training”.

Two weeks ago, I got called in to help pick up our cookies because I have a Tahoe. I drove to our local semi-pro baseball stadium where I was directed by a woman wearing a tutu to park in the holding lot. I joined two of our troop leaders in their big cars. At our appointed time, we lined up our cars to drive through the parking lot. At this point I was kind of out of words because we were following behind a U-Haul that someone rented to pick up their cookies. Across the parking lot, I could see toy haulers and horse trailers. I was told not to get out of my car at any time for any reason once I entered the cookie line, where soccer moms and dads wearing tutus were loading boxes of cookies and grooving to Taylor Swift.

When our leader hit the front of the line, the lady with the clipboard laughed. Threw her head back and laughed.

“You’re only getting 67 cases? You don’t need all these cars! You only need one. We can get 230 cases into the back of a mini-van!”

Our troop leader, who I love and who I know will never drink the Koolaide, waved me off with a roll of the eyes and a smile. I knew what she was thinking: Now we’re that troop.

Thank. Goodness.

*I’m not saying that I didn’t eat a whole box of Thin Mints all by myself. I’m just saying it was bad for me.

One of the best things about blogging has been the other bloggers that we’ve “met”.

Miss Indeedy is a Christian mom somewhere in New England with two kids, a past volleyball career and a passion for Alabama football. She writes with a gentle wit and faith that we just love.

A while ago, she introduced another Christian website called Proverbs 31 Ministry.

Secular feminists have a lot to say about Proverbs 31 and its very specific description of a noble wife. When I was younger (and unmarried), I felt the constraints of the expectations of the scripture—that a noble wife was one who cared all hours of the day for her husband and family. And I still acknowledge that a literal, strict interpretation of this passage could lead some to believe that a woman’s God-given place does not require education, career, personal choice or other forms of autonomy.

But I’m a Catholic and we don’t do literal interpretations. Turns out, I’ve discovered that being a wife and mom means I do in fact work 24/7. Not constraining, just the reality of my personal choice. And since I stay home, my contributions to my family pretty much follow the scripture exactly in terms of division of labor.

Even so, I was worried about Proverbs 31 Ministry. Visions of braided hair and prairie dresses and other such things that are just not for this Christian feminist.

I should have known Miss Indeedy would not lead me astray.

Then I bought a book by one of the founders, Lysa TerKeurst, called What Happens When Women Say Yes to God.  It was a simple, strong read, with guided Bible study at the end of each chapter. To  be honest, it’s a little too Chicken Soup for the Soul in some parts for my taste, but I am a very cynical reader. And the foundational message was so powerful and right in line with my resolution to Be this year.

This is where it gets providential, because of my post about my weight and my determination to be the healthiest version of my heavy self as possible. After I finished What Happens, I thought I might try one of their online Bible studies. So I looked up the next one. Guess what it is:

Resolution Revolution~ Jen

It’s January and the TV and radio are full of ads for gyms and diets. I know that’s normal, but it’s grinding on me this year. Because even though Dana and I have been in the gym for almost a year, I have gained 15 lbs.

I know, I know, we’re not supposed to talk about actual lbs. We’re supposed to use euphemisms like “I ate a few too many Christmas cookies” or “It’s true what they say, eggnog goes right to your waist!”

But there’s no euphemism for “My synthetic thyroid hormone meds are jacked up.”

In case you didn’t know what your thyroid does, it regulates things like metabolism. Synthetic hormones have come a long way, but they can’t replace an organ. For whatever reason, my “normal” dose of hormones, which had done the job for over a year, stopped about six months ago and sent me into hypothyroid territory. My hair started to thin and I gained a fast nine pounds. My doctor upped my meds, which lowered my levels a bit, and made my hair thicken up, but I added another six pounds. So he upped them again. I’ve been at this level for three weeks now, and while my head is full of little tufts of baby hair when I pull it all back into a ponytail, the scale has not budged.

I am trying not to freak out. I keep hitting the gym and tracking what I eat on My Fitness Pal. But I have never weighed this much in my life. After Kate was born I worked really hard to lose an extra 15 pounds and I stayed there in the years between her and Annie. Now my clothes either don’t fit or don’t look right. I don’t look in the mirror. I don’t want to take pictures.

It’s enough to derail my determination to celebrate the wins.

Then yesterday I was driving along, listening to Air1.com on the radio and Brenda was talking about why so many New Year’s resolutions fail. She had read somewhere that it’s because most of our resolutions are about ourselves. Losing weight, climbing a mountain, traveling somewhere exotic, eating better food, exercising—while none of these resolutions are bad, they are all self-serving. And since most of us drop them within days or weeks, they aren’t making us any happier, either.

But resolutions to serve others? Could be we’re much better at keeping those.

It got me thinking—I could fixate on the scale and my weight. I could live or die by the numbers every morning and let my days and sense of self-worth be dictated by whether the numbers go up or down.

Or. I could let it go. I could accept that my meds are off right now, and may never get right. I can feel thankful that this weight gain means I am alive and beat my cancer. I can stay on my eating plan and stay in the gym and be the healthiest heavy version of myself that I can be.

And. I can make a different kind of resolution this year, one that doesn’t serve myself. I will volunteer or donate or advocate for others.  I have to look around, because this idea just came to me yesterday, but I already know there’s no downside. Think of others before myself? Give some of my time, treasure or talent to help? Show my kids how to walk the talk? Yes, yes and yes.

I think this is part of learning to Be, too. Do less. But be grateful. Be giving. Be humble.
